the lotus seed that i'm looking for is used as ingredients for lotus paste in moon cake

Any Chinese store will have have the dried ones, you can cook them with rock sugar and then puree it in the food processor or there tinned varietys, some alone and other with red or black beans, best buy them cook them with the rock sugar or palm sugar , it is best to boil the lotus seeds for 30 minutes and then add the sugar, and if the water is cloudy or a scum has risen drain some off add more water just to cover and then the sugar, watch it and turn it down to a simmer so as not to carmelize the sugar, is should be thicken before you puree, if not add some cornstarch or tapioca starch in a slurry to bring it together, let it cool for 30 minute and then puree it. I would use 1 full bag of lotus seeds and 2 cups of water to start, the in the sugar (1 cup) stage just make sure the seeds are covered in liquid.
