Blue lotus/water lilly question for someone who has one or florist knowledge?

I love the look of blue lotus flowers or blue or purple water lillies. I know they open and close constantly and grow in water.

I'm getting married soon and I really would like to have this flower as one of my flowers. Is this not going to work? Is this a type of flower that will not hold up to being cut and put in a bouquet or atop a cake? Anyone know a good online site where I can find really nice ones?

Best answer rewarded, any advice appreciated.
